While guests may start at any of the interactive food stations at the all-you-can-eat buffet, many begin with the extensive soup and salad bar. This features Chef Freddy's signature shrimp Caesar salad, seafood salad with shrimp, scallops and calamari, lobster bisque and chicken pozole. Succulent meats such as roast prime rib of beef and maple roasted whole turkey are hand carved by Fantasy Springs' expert chefs. Guests may also relish grilled-to-order top sirloin steak, roast pork loin with orange-rosemary mustard glaze, baked chicken breast with artichoke and pepper tapenade, and a mouthwatering array of Italian, Asian and Latin specialties. Make sure you leave room for dessert so you do not make the resort's pastry chefs sad by not partaking in their confectionary delights. Those with a sweet tooth will enjoy the Fantasy Springs signature chocolate fountain, white chocolate mousse, Italian cheesecake, freshly baked cookies, pies and cakes, plus many sugar-free selections. Dinner seating begins at 4 p.m. Adults are $26.99 and children ages 3 to 11 are $13.99. Children under 3 are free.
